BBQ sauces

What's up fellas. I'm a big-time rib and chicken griller, and I'm always looking for new bbq sauces. A buddy of mine sent me this recipe and it is friggin AWESOME. Real easy to make too.

Your ingredients are:

2 shallots
2 cloves garlic (or to taste, put more if you want, or less)
pinch of sea salt (or kosher salt)
2 cups ketchup
4 tblsp dijon mustard
1/3 cup Jack Daniel's (2 of the little shooter bottles)
2 jalapenos
1/2 oz liquid smoke (about a capfull)
small jar raspberry preserves

IMPORTANT: most of these ingredients are to taste, meaning the measurements above don't have to be rigidly met. If you like alot of garlic, then put as much as you want. I would stick to the JD measurement tho, don't want to get drunk of your bbq sauce :lol:

Roast your jalapenos over an open flame until blackened, then put in a metal bowl, wrap in plastic, and put in the fridge for 1/2 hour. Mince your garlic and shallots, then sautee in some olive oil for about 10 minutes over low heat. Then take your jalapenos, cut the stems off, and peel off the skin, it should come off pretty easily. If you can't get fresh jalapenos in the produce section, then just use the canned ones. If you don't like a little spice, or if you're gonna be grilling for women, then cut them open and de-seed them before you go to the next step, this will cut down on the heat. After that's done, put your sauteed shallots and garlic and the jalapenos into a food processor and blend till it's pasty. If you don't have a food processor, wait until you combine everything else and blend it all at once.

Put your ketchup, dijon mustard, salt, and Jack Daniel's into a blender. Add your shallots, jalapenos, and garlic, and blend. Blend it for a little longer if you weren't able to process the shallots, japs, and garlic beforehand.

Put everything in a saucepan and bring to a boil over low flame. Stir in your liquid smoke and raspberry preserves, stirring occasionally. Let it boil high for about 5 minutes, stiring continuously, then reduce to very low flame and simmer for 20-25 minutes, stirring occasionally. Then remove from heat and put whatever you like for taste. OJ works good, lime juice works, honey works. Just have fun and experiment. Then slap that stuff on some ribs and enjoy! Don't forget the cold beers 8)
