Before anyone flames me or thinks this is race baiting? Trust me, this is a legit question. I have spent the last two weeks reserching this very topic.
And I have yet to find in any history books on how the Blacks became the best Bar BQ makers on the planet. How did they get so good at it? I have yet to see a picture of some black man in Africa with a webber.
Can anyone toss some light on this subject? why are black folks so good at making BBQ?

Found this some time ago when I was thinking about this very subject...sort of. Moreso the birth of BBQ rather than "why blacks", but same vein.

As I was reading this - I found something totally hilarious -
With the tantilizing hickory barbecue smell drawing the customer through the ranch-style doors, he is immediately greeted.
From that moment of entry until the lick of a barbecue rib, the customer is attended by genuinely concerned employees.
For those of us who've been to Gates - you walk in the door and a black chick screams, "HI MAY I HELP YOU"
Sound unusual? It's standard procedure at all six Gates and Sons Bar-B-Q units in Kansas City. The friendly, helpful attitude is born at the Gates College of Bar-B-Que Knowledge, better known as Rib Tech.
Managers and cooks as well as blockpersons (sandwich makers and rib cutters), counter personnel, and dinning room attendants attend the training classes while they learn with on-the-job training at one of the Gates location.
That should say blackpersons. There are no whiteys at Gates. However, they make some killer bbq.
When I first moved to Memphis many years ago, we went there, I believe it was & I ordered a bbq sandwich. It had freakin cole slaw on it. I thought I was gonna barf my lungs up. We have lots of weirder traditions than that. Most of which involve our cousins...
I do miss the hell outta grits when we go for breakfast. I'll say that much.

The "Jazz and Rib Fest" is held every summer along the Scioto River in downtown Columbus, Ohio. Folks from across the country set up their stands and serve some of the best BBQ ribs you have ever tasted. Infact, many are contest winners and proudly display the trophies to prove it.
I've never counted the number of black or white vendors along the boulevard. Never occurred to me to do so. It didn't matter. If you can fix up damn good food then you'll have plenty hungry folks standing in a line.
BBQ ribs, icy cold brew and relaxing on a lawn chair listening to some jams. Perfect.

I don't care for Bryant's because of the smoky flavor so much, but it's okay. I looooove the ambiance of the one by downtown. Notsomuch for the one at the boat.
Went to the smokebox they opened in Zona Rosa a couple of weeks ago. YUCK. Seriously. For upscaleyness I kinda like Fiorellas.
I still have never had Haywards. Don't know why, maybe we'll do that next weekend. (Edit, doing our own grilling this weekend)

Necessity being the mother of invention, the slaves simply took these shitty cuts of meat and found a way to make them taste better and make them more tender.
Probably passed that shit down over the generations the same way chinese folks make the best chinese food.
I guess that means the slaves invented BBQ?

I doubt that Paul. I'm quite certain that there are many BBQ joints outside KC that would measure up. That one e mentions in Texas, for instance. I will say though that KC has to have more good BBQ restaraunts per capita than any other city in the world. Two I would add to the list are Rosedale and that new one out by the NASCAR track, Famous Dave's.
All this talk of BBQ made me have a craving today, so I called in a take out order at the Smoke House in Gladstone. Two rib dinners for less than $25.00 including fries and to die for beans...you almost feel like a thief walking out of there after having scored that so cheaply.
Ribs where the meat is so tender it almost falls off the bone and then melts in your mouth as you savor the hickory smoked flavor...hmmm, pure culinary ectasy.
Oh, and btw e, I'd drive twenty extra minutes down North Oak and endure endless traffic lights, road construction, and dipshit drivers, to get to the Smoke House...long after I had passed Smoke Box with my BBQ snob's nose held high.

Best BBQ in KC (in order):
1. SmokeHouse BBQ- the Gladstone location is SLIGHTLY better than the Indep. crib.
2. Summit Hickory Pit BBQ- a CLOSE 2nd to Smokehouse.
3. Fiorella's JackStack BBQ- had it about a week ago down at the Frieghthouse. Pretty goddamn good.
4. Bryant's- enough said.
5. LC's- a hole in the wall joint down in the 'hood, but the slabs are to DIE for.
While we're on the subject....anything referred to as "Barbeque" outside of Kansas City just ISN'T, OK? WE are Tha Shizzle when it comes to REAL barbeque, PERIOD. Anything else is total HORSESHIT.
Missed "Truman's deck" som'eres on that list... Friends and fam'bly didn't gloss me "Iron Chef Barbecue" for nuthin....
