For my wedding.....
In June of 2007, we are planning on preparing a combo of 1) pasta sea shells, stuffed with cheese (mozarella, ricotta, parmesan, and cream cheese) 2) meatballs in red sauce (bride's dad is preparing these) 3) tiermasu (probably spelled that wrong) 4) fried twinkies. Should be good stuff. Will gladly give the sea shells recipe to anybody who would like it. Great eats, should you be so inclined. :)

Long story, bro'. We first tried them at a ribfest here in 2005. Absolutely loved them. Tried cooking them ourselves and it's not that hard. Just butter the twinks, fry in a pan, and cover with chocolate syrup, whipped cream, and powdered sugar. Totally awesome. By the way... I hope you're not having a big wedding. Having just gone through all the planning/executing/etc, I am SO GLAD I didn't decide to do my own cake. I can't even begin to imagine what it would have been like to prepare all the food ourselves! Holy smokes.

That hurts, my friend. (kidding) We had fried twinkies together once last summer. Both fell in love with them. Very easy to make, actually. Also, it's with Tiermasu. Two desserts (and ice cream, too....she talked me down from dirt cake ;) ) You tied the knot? Congrats. When'd that happen??? We're looking at 200-300 guests. Not huge. The reception hall, btw, has a gigantic kitchen and it looks like a friend I have who runs a restaurant might allow me to keep the food in his walk-in overnight. 200-300 guests?? That's not a small affair.
Imagine what Fried Twinkies might taste like when they become cold and soggy. I can't imagine they'd be any good warm and fresh, but cold? Yuck. Unless you have a lot of people doing the cooking, there's no way you'll have 200-300 servings ready to go all at once.
Tiramisu is fine and can be made well in advance.
Seriously, BCO... the more small details you can let go, the better off you'll be.
Who is doing all the cooking? Don't even say you're doing it yourself. What kind of venue? How much $$ are you saving by doing it yourself as opposed to finding some dependable catering that you don't have to think about too much yourself?
And yes, I tied the knot. :D nearly 3 months ago now. Hard to believe. It was by far my favorite day ever. Congratulations to you, but please DO NOT COOK YOUR OWN WEDDING FOOD. You want to have time to enjoy the day, it goes way too fast as it is.

Well, for the fried twinkies, they will be prepared on site. You want one, we have a hot plate set up and somebody fries one for you. Congrats, Christy, for your wedding. You got pics for us? :) The food will be prepared ahead of time. Her dad's making the meatballs. We can prepare the shells (probably the day before and they'll be cooked the day of). They will all be cooked on site. A lady from her church has agreed to make sure everything gets tossed in the oven on time. Tiramisu will also be prepared early (probably the day before). Preparing it ourselves should save her parents about 1000-2000 dollars. Also, it allows us to pick and choose our own menu.ppanther wrote:200-300 guests?? That's not a small affair.
