I was just about to interject that this is a common occurance in my industry (real estate) and it isn't looked down upon unless the client was brought in by another person and "handed off" to someone else. In my field, when an attorney leaves a firm, it's the client's call whether he goes with the attorney or stays with the old firm. But I don't think there's any way to make an appropriate comparison to college football in this case. Among other things, recruits have to be vetted through admissions, etc.
