Christmas Dinner
Is anyobody fixing anything special for Christmas or Crhistmas eve?
We're not having a large group, just us and my wife's father - 5 of in total. I've ordered a 3 rib prime rib roast, which I'll be roasting and accompanying with baked potatoes and a Caesar salad. We may try Yorkshire pudding this year. My daughter is going to make a Bûche de Noël for dessert.

Ordered a 5 rib roast to go along with a spiral ham and baked stuffed shrimp that a sister-in-law is bringing. Sides will be twice baked potatoes, honey balsamic red onions, mashed taters, sweet potatoe casserole and some kind of broccoli dish.
This will be be 1st Christmas cooking, but after the success of my 1st Turkey Day, I'm looking forward to it.

And the next time I have good pood prepeared by an American will be the first time. Laught at "Limey cuisine" all you like, but when it comes to preparing a roast beef meal, it ain't even a close contest... not even close.

Christmas Eve: We do a modified Italian Christmas Eve tradition - lots of "wopfood" but no seafood (neither my wife nor my kids dig seafood). This year the main course is a freaking huge multilayered lasagna. I put a pound and a half each of ground beef and Italian sausage and three different kinds of cheese. Naturally, it also has my own homemade sauce in it. I've started having my eight-year-old son help me with the prep as a tradition.
Tomorrow my wife is making stuffed lamb. I'm not usually that big a fan of lamb, but what the heck.

What do you stuff the lamb with?
I've been known to cook a bonless leg of lamb on the rotisserie. Seasoned only with EVOO, garlic slivers stuck under the fat layer, sea salt and pepper. Delicious every time.

I made a red velvet cake for the huge family dinner. That was all I did for that.
We had a neighborhood party where we just did appetizers. I made pulled pork sammies on silver dollar buns and I also made sausage wantons with a hoison and soy sauce dip. Verrah tasty.

Two things I learned from him in making lasagna:
1. He doesn't cook the noodles. Just make up the lasagna the day before, coating the noodles with sauce. Let the whole thing sit in the fridge overnight, then bake it. The noodles come out perfect, the lasagna comes out nice and solid like a piece of cake.
2. He crumbles up hard-boiled eggs instead of ricotta cheese. Great texture, very subtle flavoring from the eggs.
And of course he puts a ladle or two of sauce over each piece when he serves it.

I feel sorry for you guys.
I ate left over prime rib and Caesar salad (undressed, of course, until used) for two days. Made sure I saved a couple extra bottles of the good cab to go along with it.
Never had any nasty morning after dumps, either.
