Best spin I could put on it is that he hasn't exhausted his appeal rights, so he could say that his conviction isn't final.

That is not the same as "I have not been convicted", however.

Technically, Stevens is right. To my knowledge, all that has occurred to date in his case is that a jury has reached a verdict that he is guilty of seven counts of the indictment. I am sure there are or soon will be post-verdict motions that the Court will have to resolve, which seek a new trial or dismissal of the case on technical grounds. Stevens isn't scheduled to be sentenced until February 25, 2009, so his criminal case is not final and there is no judgment from which he can appeal. In the meantime, Stevens could croak, while maintaining his innocence, which would extinguish the criminal case and leave it as if nothing ever happened. Most people interpret the word "convicted" as being "found guilty" in a verdict returned by a jury. In that sense, Stevens has definitely been convicted.

From a political standpoint, however, Stevens' career is over, as well it should be. No way he can, or at least should, win an election following a guilty verdict.

I disagree. In legal parlance, if he wins his appeal, won't his conviction be overturned? For that to happen, there has to be a conviction to start with.
