I use them when making Lomo Saltado. It's a Peruvian dish. Cut the tips into thin strips and marinate in red wine and aji amarillo peppers (don't substitute). Sear the beef, remove it. Then saute sliced red onion until it softens. Add a couple tbs of soy sauce, 1 tbs vinegar and about a pound of roma tomatoes cut into wedges and one aji cut into strips and continue to saute until they get soft. Return the meat to the pan and give a few turns then add around a pound of french fries (cooked) and serve over white rice.Toddowen wrote:Anyone got any recipe for them that you regularly use?
