Winter Warmers

Winter Warmers
Since you poor bastards are heading into the freeze your wee titties off part of the year I suppose I could share some of my favourite winter recipes
Chicken, Leek & potato soup
1 kg free range chicken thigh fillets
3 leeks
2 onions
5 litres water
2 tablespoons salt
2 tablespoons whole black peppercorns
2 sachets masterfoods bouquet garni
5 cloves garlic
2 stalks celery
1kg potatoes peeled cut into cubes
To make stock
In a large stockpot bring water
1 of the onions’ peeled, Garlic cloves peeled & cut in half, salt peppercorns , celery & bouquet garni to a rolling boil then put in untrimmed (leave the fat on) thigh fillets, put on lid turn off heat & leave to poach for about 25min, remove thigh fillets shred & put aside
Strain stock back into pot
(I had more stock than needed for the soup so I put excess in a container to freeze for later use)
Turn heat back on to med-high & ad peeled & cubed potatoes
Cook till the start to soften slightly & add sliced leeks & diced 2nd onion simmer till potatoes & leek are soft then add shredded chicken & salt & pepper to taste & it tastes delicious!

Vege Pasties
Ingredients
1.5kg potato
1.5kg golden sweet potato
1kg butternut pumpkin
2 large onions
2 leeks
50g butter
2 sprigs Fresh rosemary
1 tablespoon vegetable stock
1 tspn salt
Fresh cracked black pepper
10 sheets ready rolled puff pastry (I use Borgs)
2 eggs + tablespoon water for eggwash
Filling
Peel & chop potato, sweet potato, & pumpkin into large chunks of roughly the same size for each, then steam each separately till cooked through & set aside in an extra large bowl, I partially break them up at this time when I mix them together
Cut onions in half then into thin slices, & trim leeks cut lengthways then slice those as well In a large frypan melt butter & sauté onions till they start to soften, then add leeks & cook through till soft, add salt, pepper, vege stock & chopped rosemary & cook a min longer
Add to potato pumpkin mixture, combine thoroughly & set aside to cool
Pasties
Preheat oven to 150 deg fan forced bake
Separate pastry sheets to thaw & brush all the way around the edges with eggwash
In the centre of each pastry place an equal amount of the filling then I fold them into square parcels using opposite diagonal corners place on a tray lined with baking paper, brush with egg wash & bake for 45 min slide onto wire rack to cool delicious hot or cold

2 ½ tablespoons cornflour
1 tablespoon olive oil
1/3 cup thickened cream
Salt & fresh cracked black pepper to taste
8 sheets ready rolled puff pastry
1egg + 1 tablespoon of water
Heat olive oil on a high heat & sauté onion till just going clear, add mushroom & garlic & cook through transfer to a plate

Here is some turkey stock on the stove for Thanksgiving. I just hook the ball over the handle of the pot.

2oz Scotch
