This is for Thanksgiving dinner tomorrow night. I smoke for about 2 hours per pound right around 200-220. I was wrong about the size of this turkey, this is just under 14 LBS.
Still going strong, and starting to look good....
There a cinder softball in that pic for anyone who's willing to go there.
I'm also going to do a Fried Turkey, So I'll PET that one as well.

I only smoke for the first few hours. Essentially 2 loads of wood, and then just coals. With a barrel smoker like this that is above direct heat and smoke, the smoke flavor gets pretty intense after awhile. The skin on this bad boy is inedible, but it locks in all the moisture. At this point, it is its own foil.

At this point, I figured the Turkey was getting lonely, and needed some friends.
Some brats, onion and beer...
Ready to join their buddy...
One big happy family...
Some last minute charring...
Game on...
5:00AM... booze wears off, dedication kicks in...

Indy, enjoy pacing around the kitchen feeling like a eunuch. I've done a couple of those in my time, and I usually push my way in to do something. Usually peel potatoes or something, but I can never just relax and let someone else handle everything.

Oh, HH, it gets worse. My in-laws "cater". Dis-fucking-gusting. Trust me, I won't be near the kitchen when they open the plastic containers to dump food onto $500 serving trays.
2 years ago, I offered to do the meat. They obliged. I fried a turkey, smoked a turkey and smoked a ham. They also brought in a roasted dried out turkey. The vast majority ate that shit. I said never again. Those who did eat my birds and ham were appreciative, but having 25 lbs of turkey and 3/4 of a ham left over after 40+ people ate was more than I could take.
