Ok...
I took the ground pork and beef (1 lb each) and put them in a bowl. I added a little worcesteshire, S&P, cumin and cayenne. I mixed together like you would a meatloaf.
Then, I spread some plastic wrap on the counter. Made it pretty thick and wide because I wanted it to hold up to the meat. Place the meat on the plastic wrap and spread it out into a rectangle. Don't spread too thin. 1/2-3/4 inch is good.
I spread the duxelles recipe from mvscal over the meat. I added 4 cloves garlic to his recipe, finely minced. Then I spread some cheese over the duxelles. Remember to not spread to the edges of the beef.
Use the plastic wrap to help you pick up and roll/mold the meat into a loaf. Be sure all sides are sealed. Then, I weaved the bacon on just as you wold weave a crust onto a pie.
Normally, I would smoke this on the smoker for about 3 hours, but it is 1 fricking degree out right now so I put it on a broiler pan so the fat could drip off. I cooked it at 375 for about an hour. Cook time will vary. Just check the internal temp with a thermometer and make sure it hot enough for safe eating.
