Chicken and veggies over pasta.

Wifey and I got home kinda late from work last night. I was gonna just throw some dogs in a frying pan, but, she said we had to do something with the defrosted chicken breasteses in the fridge or they'd go bad.
So, I looked in the fridge. 1 ginourmous red bell pepper, few broccoli bunches, half an onion, 2 carrots and a tomato.
Grabbed them all along with the 4 or 5 breasteses and a bottle of marsala I bought last week to help my daughter make canollis for school.
Canollis, btw are way to much work. Go to a good italian pastry shop instead.
Diced the onion and about 4 cloves of garlic, sauteed in EVOO, throwed in the diced chicken. Poured about a half cup give or take of marsala in, guzzled about an equivalent amount. Added some fresh ground black pepper, some oregano and a little ground ginger, just because it was sitting there. Cooked it all for about 15-20 minutes, removed chicken and steamed veggies in the remaining sauce for about 5 minutes, added chicken, cooked another 2 minutes.
Spread over pasta, add a little parmesan chiz and a splash of soy sauce.
Out. Fukking. Standing. Probably about 45 minutes start to finish. Definitely will do again.
