I started by doing the apple mix the same way I do for my pies
Then found a recipe for the crumble topping on the net but just had to tweak it & add to it
a bit cause that's just the way I roll
This will serve a good sized dinner party with a bit left over for the next day
you can always halve the amount but leftovers are awesome!!
Apple Mixture
3kg green apples peeled cored & cut into large chunks
1/2 cup Muscat (a fortified sweet wine by cooking in this the flavour is amazing & use far less sugar with the apples)
1 teaspoon Vanilla extract (vanilla extract has a for more intense flavour than vanilla essence )
1/4 cup brown sugar
1 teaspoon cinnamon
in an extra large saucepan with a lid place apples & muscat & simmer on a low heat till tender mixing occasionally & for the last 5 min with the lid off to evaporate some of the excess liquid but still a little juice in the pan add vanilla, cinnamon & brown sugar & set aside
Crumble topping
3/4 cup brown sugar
3/4 cup rolled oats
3/4 cup coconut (I use the moist coconut not desiccated)
3/4 cup butter
2 teaspoons cinnamon
2 teaspoons vanilla extract
2 teaspoons nutmeg
1 cup plain flour
130g pecan pieces
melt butter add vanilla then & mix thoroughly with premixed dry ingredients
in a large rectangular baking dish pour in apple mixture, top with crumble mixture then cook in a preheated oven at about 170 deg C fan forced for about 45-50 min or until the topping is brown & crunchy
Serve with vanilla ice cream & nom nom nom
