They don't use any dairy at all.

They use olive oil, lemon juice, some garlic and fresh herbs (marjoram, I believe). It was a lighter, brighter flavor. A good change of pace especially for summer.

Our local place has two kinds
One with mint which is very good and one with allspice (but I suppose you could use marjoram) which is also good but with different dishes.

Best mashed potatoes by far use the old school Peruvian varieties. They taste so good you don't even want to add anything.
