Smoked Bacon Double Cheeseburger Meatloaf

Started with a 3lbs, 3 meat (beef, veal, pork) meatloaf and divided in more or less in half. Made an indentation with the bottom of a bread pan for a guide.

A layer of cheese, a layer of pickle, ketchup, a layer of my home crafted bacon and another layer of cheese. Then top it off with the other half of the loaf and smooth it out. I smoked it on an upside down rib rack on a double layer of foil with holes in it for drainage.

Into the smoker...and:

Yeah...it was pretty fukken good. I used pecan in a Weber Smokey Mountain cooker with an empty water pan and vents wide open. You want to smoke it hot and fast. Temp averaged about 325 and took about 90 minutes or so maybe a bit more.
Use whatever meatloaf recipe floats your boat. Smoking it takes it up to eleven.
