The scenario: Passing through on a road trip from Bugaha to points east and stopping for lunch in this regional hub of high quality BBQ.
Where would you stop?

I'd stop at a bistro. No bbq for me.

According to Yelp, Joes and Q39 might be good choices.

One lunch only?
:? You'd need a couple of weeks for a proper sampling...
Joe's KC Barbecue (formerly Oklahoma Joe's) is your go-to if you're only gonna do a one-'n-done.

You won't be disappointed... Or leave hungry. As for your return trip - it depends.
If you're looking to mix it up with the area's indigenous population (they're a lot like Omaha's, I'm sure), you can explore barbecue's "roots" (pun intended) at Arthur Bryant's or Gate's. Like the help in these joints, the result can be unpredictable. But when they're on, they're ON. Note of caution should you hit AB's: don't expect a sweet KC-style sauce. Its gritty and spicy and fairly typical of what you would find in a soul food restaurant.
For my money, I'd check out Jack's Stack. A bit too pretentious for my blood, but treat yourself to a beef crown rib. You'll thank me later.

One of the four dumbest things posted on this board this month. Did you have an aneurism while posting?

I'll assume you'll be heading south on I-29 then taking a left turn on I-70 to head to St. Louis?
Easy call then, for convenience & quality.
Not long after you get past KCI, you'll come upon Zona Rosa where there is a Smokehouse BBQ right off Barry road and Mo 152 - you can't go wrong with a slab of pork ribs and make sure you get a side of the baked beans that are not to be missed. You'll probably want to get a pint for take out, thank me later. I never even liked beans until I tried theirs.
Now, while what Tru & Scott suggest are fine choices, you'll have to go out of your way. After leaving Smokehouse, get on 152 east. That will take you straight over to I-435 south where you can then hit I-70 and miss the clusterfuck that are the downtown freeway loops where you might wind up in Kansas. You want to avoid that.

Quite likely the best rib dinner in the world.
For lunch, I would highly recommend a newer place called Slaps - Squeal Like a Pig. Best burnt ends in town.
They won the Pitmaster Challenge last year. Still flying a little under the radar, but the word about the this
place is spreading fast.

I did this. I have to say it was a complete let down. I stood in line for an hour which I took to be an encouraging sign. I had the ribs and brisket dinner. The ribs weren't bad. They didn't exactly impress, though. The brisket was simply pathetic. The BBQ beans were excellent. The sweet iced tea was lukewarm.
C-
Central Texas > KC and it isn't even close. Texas shits better BBQ on a bad day. It's too bad. I really wanted to enjoy it.
