I’m in Tennessee. Not gloating about tOSU’s ass-whipping of SEC #3 per se (Fuck yes, Jesus, judge my ass right the fuck now goddamnit). I bought a 5lb Wagu bone-in rib roast on Sunday. Put that shit in my check-in (separate from
my check-in 1911 45 ACP and Beretta 92FS and the old lady’s 92X). Air dried the mofo from Sunday until this morning. Took it out this morning to air at room temp for 90 minutes, half of which was spent on my knees praying that Roux could take a stand up piss (no offense Screwy) and not clot shot his shoulder. Somewhere after that felt like twenty minutes (or 0:25 for Screwy, you side hustle nasty), we moved that beyotch into the heat.

Kenji reverse sear here. Into the oven with S+P from Mrs. 88 with love (yes, that took all she had for December). 225F for who knows. That’s why they sell probes. Took nearly four hours. Mrs. 88 lost her shit at the end, which aside from the great slab of beef, is 3/4 of the show. She made hashies and cream plus roasted carrots with chili/cinammon and honey glaze.

Perfect, as always. I’m now crushing my distiller son’s private stash. Pray for my liver.

Haven't had a drink in 20+ years. That will change drastically once the Docs tell me I only have 6 months to live.
