Mardi Gras approaches, and I need Cajun ideas

Fiancé and I are planning a Mardi Gras party for this weekend, and have some ideas, but what kind of kick-ass Cajun concoctions have y'all produced?
Looking for a really tasty bouillabaise recipie, specifically.

Good cajun food always starts with good gulf Coast Seafood. I'm sure you can lay you hands on shrimp, but what about live crabs?

RED BEANS and RICE is a must
go to foodtv.com and search it. choose Emeril's recipe
can't go wrong.
I will say this. Cook some andouille separate at the end. Spread the rice in a huge serving dish and slather the red beans on top.
Fry up the adouille in a skillet with extra garlic and then put it on top

also, make some gumbo or chicken gumbo
