Sounds tasty. It's going on my list of things to try. That andouille isn't something you find at every store in this backwater hicksville, though, so I may have to go looking for it.

Serve with baguettes and pilsner beer. Squirt load into lady friend later that evening.

So...I'm gonna cook up a meal for my lady friend that serves 6-8? Why? Oh wait, I forgot Rumps reads posts in here...

been making gumbo/Roux for years. Never seen anybody mix in the trinity (Onions, Peppers, Celery) before the flour. In fact the high heat of the roux is what cooks the veggies. Replace the butter with bacon grease, then add the flour, then the trinity and I believe you're on to something.
